INGREDIENTS:
- Small romaine heart
- 100g cherry tomatoes
- 15g red onion
- 100g English cucumber
- 15 grams feta cheese
- 30g Kalamata olives
- 10ml olive oil
- 20 ml apple cider vinegar
- 1 garlic clove
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- salt and pepper to taste
DIRECTIONS:
- Finely chop all vegetables and place in a large bowl then top with feta cheese and olives.
- Combine olive oil, apple cider vinegar, garlic, dried basil, dried oregano, salt, and pepper in a small bowl and whisk to combine.
- Pour over salad and mix well.
- Serve with lemon pepper grilled chicken
