Ingredients (for 4 servings):
- 4 medium Avocados
- 1/3 cup Yogurt (2% Plain Greek)
- Hot sauce to taste (we used Franks)
- 400g Shredded Chicken Breast (cooked)
- 2 Green Onions – diced
Directions:
- Preheat oven to 400
- Halve the avocados and pit them, pop onto a baking sheet
- Mix together hot sauce and yogurt to taste; mix in chicken and ¾ of the green onions
- Stuff avocados with equal amounts of the buffalo chicken mixture,
- Bake for 15 mins and top with remaining green onion
