INGREDIENTS
Makes 6 servings
- 6 Eggs
- 6 Slices Turkey Bacon
- Handful of spinach, chopped
- 50g red pepper, chopped
- 3 cloves garlic
- Cooking Spray
- Salt and pepper to taste
- 30g Feta Cheese
DIRECTIONS
- Preheat the oven to 400 degrees F. Spray 6 -cup muffin tin with cooking spray.
- Line the bottom of each cup with a piece of turkey bacon (I ripped my pieces in half and layered them on top of each other to make them fit).
- Cut the spinach and red peppers into little pieces and place them inside each tin on top of the turkey bacon.
- Place eggs in blender (or whisk) with salt, pepper, and garlic. Blend until mixed and eggs are a bit frothy.
- Pour egg mixture on top of the red pepper and spinach in each tin.
- Bake for 16-20 minutes.
- Serve with avocado and sourdough toast
