Preheat the oven or BBQ to 400. Marinate halibut filets in olive oil, salt and pepper.
In a large mixing bowl add in the washed spinach and arugula. Chop 1 peach into bite sized slices and grill for 1-2 minutes a side.
Add halibut to the grill and cook for 10-12 minutes, flip the filets half way through cooking time for an even sear.
While the halibut is cooking, finely chop walnuts, red, and green onions to add to the mixing bowl. Once the peaches are grilled and tender to touch add to the mixing bowl, drizzle on 60g balsamic glaze and sprinkle with sunflower seeds.
