INGREDIENTS
- 2 tsp Avocado Oil
- 1 small Jalapeño (sliced and seeded)
- ½ cup Red Onion, diced
- 1 clove Garlic
- Handful of Cherry Tomatoes, halved
- 150grams Egg Whites
- ½ an Avocado
- Crumbled Cotija Cheese (can sub goat cheese)
- Salt, pepper, and cilantro to taste
DIRECTIONS
- Heat oil in medium saute pan over medium-high heat.
- Add jalepeno, and onion and saute for 3 minutes.
- Add garlic, tomato, salt, and pepper and continue to saute for another 3 minutes. Then transfer the mixture to a separate plate.
- Return pan to stove and reduce heat to medium. Add egg whites and cook until the eggs are set and the bottom of the egg is golden. (2-3 mins)
- Remove from heat. Add onion mixture, diced avocado, cilantro and cheese to the egg white, and fold over to form the omelette.
- Serve warm and enjoy!
