1. Preheat the oven to 425 degrees. While the oven is heating, cube the sweet potato into 1” pieces and place on a lined baking sheet. Dice the cauliflower, red bell pepper, onions and lettuce, set aside for later use.
2. Place the sweet potatoes in the oven and cook for 25 minutes. Pull the pan out, add the chicken, cauliflower, peppers, onions and season everything with taco seasoning, be careful of the hot pan. Add baking tray to oven and cook everything for another 15-20 minutes or until chicken is cooked all the way through.
3. In a bowl add shredded lettuce, vegetables, layer on chicken, and top with fresh avocado and cilantro as garnish. Enjoy!
