In a medium bowl mash your banana, crack two eggs and whisk with a fork until well combined. Lumps are okay! Add in the coconut flour, unsweetened almond milk, vanilla and mix to combine. Fold in the baking powder, salt and cinnamon, let the batter sit for 1-2 minutes to thicken. If the batter is too thick for your liking add in another tbsp of almond milk.
Lightly coat the pan with coconut oil and place over medium heat. Add a heaping tablespoon of batter to the pan and cook for 2-3 minutes until air bubbles appear then flip for another 2 minutes.
Add toppings of choice such as yogurt, granola, fruit and maple syrup. Enjoy!
