INGREDIENTS:
- ½ cup egg whites
- ¼ cup cottage cheese or greek yogurt
- ¼ cup pumpkin puree (not pumpkin pie filling)
- ½ cup oats
- 1 tsp pumpkin pie spice
- 1 tsp baking soda
- Optional: ½ scoop protein powder
DIRECTIONS:
- Add all the ingredients into a blender and blend well.
- Heat a pan to medium-high heat, once heated, pour batter into desired size pancakes.
- Cook until bubbles are forming and edges are firm, usually around 5 minutes.
- Flip and allow to finish cooking through.
- Serve with pumpkin seeds and/or greek yogurt to add additional protein. (optional)
