Ingredients (for 1 serving):
- 1 small size wrap (35g) Whole Wheat
- 50g Shredded Chicken (measured raw)
- 15g Cheddar Cheese
- 50g Peppers
- Green Onion
- 75g Greek Yogurt
- 50g Avocado
- 1 tbsp Nutritional Yeast
- 2 tsp Garlic Salt
- 1 tbsp Lime Juice
Directions:
- Boil your chicken breast for 10 minutes
- Once cooled, shred with a fork or use a hand held blender
- Pan fry the peppers until soft
- Cover half of the tortilla with the peppers, then shredded chicken
- Top with cheese and green onion
- Flip the tortilla over and place on a baking sheet
- Bake in the oven at 350 degrees for about 10 minutes, or until the cheese is melted and the tortilla is a bit crispy
- Make your guac: mash your avocado in a small bowl and add garlic salt, lime juice and nutritional yeast
We served our quesadilla served with salsa, sour cream, guacamole
