Ingredients:
- 1/2 cup cooked quinoa
- 1/2 avocado
- Topped with homemade pickled onions
Bbq cajun chicken:
Seasoned with @splendorgardenorganics cajun blackening rub, grill 6 minutes a side.
Cowboy caviar: Serves 4-6
- 1 can black beans
- 1 can corn
- 1 cucumber
- 1 red onion
- 1 bell pepper
- 1 bunch cilantro finely chopped
- 1 Tsp garlic powder
- Juice of 1 lime
- Salt & pepper
- On a bed of shredded lettuce
Combine all ingredients in a large mixing bowl, and last up to 4-5 days in the fridge.
Directions:
- In a bowl layer shredded lettuce, ½ cup cowboy caviar, ½ cup cooked quinoa, 50 grams avocado and 120 grams of grilled chicken breast.
- Garnish with cilantro, lime juice and pickled onions.
